Steven, I know next to nothing about Illustator......I only use it as a conduit to open problem files so I can work with them in Corel.
But, one thing I do frequently use it for, is to convert those pesky font defaults.

If you place, instead of open the file, then use Illy's flatten transparency option, it will convert the fonts for you.
Obviously the term doesn't have the same meaning as it does in Corel. Flattening doesn't convert the file to raster at all......just turns those 'missing' fonts into a curve for you
Not sure if any of this information is helpful. It's just a tidbit of Illy behavior I know a little about.
