Adding Versaworks cutlines to graphics in Adobe Illustrator

This video shows the process of working with several different graphics in Adobe Illustrator and setting up cutlines for print and cut on a Roland VersaCAMM,

I have a client who wants 250 cut vinyls of their logo for some Yeti cups.  I am sure it can be done, but I need some help. Can anyone help me?

I have a BN-20 and Illustrator CC.  I have watched this video 100 times and for some reason it's not working for me the way it does in the video.  I need to create a 2 color text logo.  So I'm typing out the text.  I have tried doing just a 7 stroke which is just around the edge and I've also tried doing a larger stroke and putting the fill on top so it's 2 complete layers.  But when I select all and try to Expand like you do in the video mine isn't highlighted?  Of of my words has to have a envelope arch so I don't know if thats causing the problems?  I've tried selecting the Expand Appearance first then expand and that isn't working to bring the line to the outside edge in order to add the cutline.  

Do you know what I'm doing wrong??
