A Digital Printing Network

We are primarily an apparel and uniform printing business as far as the Versacamm is concerned. We Have been using Stahls die cut numbers for the past 20 years for all of our uniform numbers. I am having a very difficult time getting prints to match the colors of their Cad Cut Thermo Film. When I go to the Pantone color bridge and pull up the color and put it side by side with the cmyk equivalent they look exactly the same. The problem is that neither one looks like the colors shown on the color bridge or the item that we are matching. Here is where it gets really wierd. If I set up spot colors in versaworks and convert them to the colorbridge cmyk values it matches perfectly. Why is it that a cmyk value in an eps file would print differently than that same color mixture given in Versaworks? I have color management set to off in X4 and my eps export is set to not convert spot colors and not use an icc profile. I would rather not set up a custom color in versaworks every time I want to match something. I have the same issue with my Roland color system chart, the colors look completely different if you use the cmyk value rather than the chart value. Both of our machines, SP-300i and VS-300, give very similar results but they are both off from what we are expecting. Do we need to have something calibrated in the printers or have profiles created to account for the changes?
